3 easy & delicious VEGAN meal ideas

Sharing three of my go-to vegan meal ideas – fresh, simple and YUMMY. Featuring – a Greek-inspired quinoa salad, a chickpea “tuna salad” sandwich, and baked tofu with a yummy kale salad & oven fries. No recipes, just ingredient suggestions!

— Greek-Inspired Quinoa Salad —

Ingredients:

cooked, fluffed & cooled quinoa

curly parsley, roughly chopped

lemon juice & zest

olive oil

olives

halved cherry tomatoes

garlic, finely minced

Combine everything together in a bowl – be generous with lemon juice & salt + pepper. Even better when left to sit overnight!

— Chickpea “Tuna Salad” Sandwich —

Ingredients:

chickpeas, drained and rinsed

hummus

pickles, diced

halved cherry tomatoes

avocado, diced

leafy greens

toasted whole wheat bread

Mash chickpeas with hummus, salt, pepper until you reach your desired texture – I like a balance between chunky and smooth. Stir in pickles, tomatoes, avocado and leafy greens.

Layer on two slices of toasted whole wheat bread, MUST CUT DIAGONALLY (no other way, fight me)

— Kale Salad, Oven Fries & Baked Tofu —

Ingredients:

Kale, thoroughly washed & chopped

Avocado, diced

Cucumber, diced

Russet potatoes, peeled and sliced into fry shapes

Olive Oil

For the tofu: Extra firm tofu, drained and patted dry or pressed

1-2 tbsp cornstarch

soy sauce

sriracha

sesame oil

honey

For the dressing: Lemon juice

Tahini

Dash of sugar

Salt + Pepper

garlic powder

Water to thin it out, if necessary

For the tofu, mix all of the ingredients together and spread on a lined baking sheet.

For the potatoes, soak in ice water for 10-20 minutes. Drain, spread out on parchment lined baking sheet and drizzle with olive oil, salt & pepper.

Bake at 400 degrees for 20-30 minutes or until fries are golden and crispy, and tofu is nicely browned and has developed a crust.

For the kale salad, massage kale leaves with lemon juice until broken down. Add cucumber and avocado.

For the dressing, mix all of the ingredients together. Combine with kale salad. When the tofu is done, add to kale salad. Add fries to salad or eat separately.
